Seared Peppered Yellow Fin Tuna with Dried Cranberries, Orange, Chili & Dill
Ingredients
- 1 lb tuna loin (cut into three long pieces)
- 1 handful black peppercorns
- 1 handful Sea salt
Dressing
- 2 Tbsp Dried cranberries (soaked in hot water, drained, dried and chopped)
- 1 shallot (finely chopped)
- 1 red chili (finely chopped, seeds removed)
- 1 tsp grain mustard
- 2 Tbsp dill (finely chopped)
- 1/2 cup olive oil
Salad
- 1 handful salad greens
- 2 radishes (julienned)
- 1/4 fennel (finely sliced)
Instructions
- Crust the tuna loins in the pepper and season with a little sea salt
- Sear the loin on both sides for 30 to 40 seconds and then chill in the fridge
- Thinly slice the tuna and divide it between six plates
- Add a little salad at the top of each line of tuna
- Combine dressing ingredients and dress the tuna with it
