Preheat oven to 350°
Place ingredients into food processor and pulse for 10 seconds or until mixture is thick and chunky with no solid cranberries visible. Place mixture into a medium saucepan that is covered and simmer on medium heat until mixture begins to boil.
While sauce is heating up, wash fresh ingredients and dice the apple into small cubes. Slice the green scallions into thin slices and finely chop cilantro and place into a medium glass bowl. Slice the lime in half and squeeze the juice onto the mixture and mix thoroughly with a wooden spoon.
Once mixture is boiling, add sugar and mix with a wooden spoon. Reduce to medium/low heat, remove the cover and simmer until the consistency is thick, while stirring occasionally. Once consistency resembles a thick sauce, reduce the temperature again to low and let simmer until ready to use.
Once sauce is turned to low, slice bread into medium/thin slices and place bread into the oven for 15 minutes or until golden brown.
Assemble bread by taking 1 slice and placing 1 Tbsp of fruit mixture and drizzling 2 Tbsp of cranberry sauce on top. Add a pinch of orange zest on top to garnish.
