Ram Cran Crostini

Ingredients

  • 2 cups frozen cranberries
  • 1/2 cup cranberry juice
  • 1/2 cup honey
  • 1 teaspoon salt
  • 2.5 cups McIntosh red apple
  • 1/4 cup scallions
  • 2 tablespoons cilantro
  • 2 tablespoons lime juice
  • 1/2 cup sugar
  • 1 baguette Italian bread
  • 1/4 cup Orange zest

Instructions

  • Preheat oven to 350°
  • Place ingredients into food processor and pulse for 10 seconds or until mixture is thick and chunky with no solid cranberries visible. Place mixture into a medium saucepan that is covered and simmer on medium heat until mixture begins to boil.
  • While sauce is heating up, wash fresh ingredients and dice the apple into small cubes. Slice the green scallions into thin slices and finely chop cilantro and place into a medium glass bowl. Slice the lime in half and squeeze the juice onto the mixture and mix thoroughly with a wooden spoon.
  • Once mixture is boiling, add sugar and mix with a wooden spoon. Reduce to medium/low heat, remove the cover and simmer until the consistency is thick, while stirring occasionally. Once consistency resembles a thick sauce, reduce the temperature again to low and let simmer until ready to use.
  • Once sauce is turned to low, slice bread into medium/thin slices and place bread into the oven for 15 minutes or until golden brown.
  • Assemble bread by taking 1 slice and placing 1 Tbsp of fruit mixture and drizzling 2 Tbsp of cranberry sauce on top. Add a pinch of orange zest on top to garnish.
