Cranberry Ketchup

Ingredients

  • 3.5 oz. dried cranberries
  • 2 ½ cups cranberry juice
  • 1 T sugar
  • 3 cloves
  • 1 stick cinnamon
  • 3 green Coriander seeds
  • ½ bay leaf
  • 10 black peppercorns
  • ¼ cup red wine vinegar
  • 2 T tomato paste
  • 2 T ketchup

Instructions

  • Directions
  • Boil dried cranberries with juice. Add spices and let simmer for about 2 hours until cranberries are overcooked and the juice is reduced.
  • Add vinegar and bring to boil again for about 15 minutes. Add tomato paste and ketchup and bring to boil again. Strain through a sieve and serve at room temperature.
