Ingredients for Cranberry Cup with Fruits and Vegetables
- 1 1/2 cup dried cranberries
- 2 peeled carrots
- 1 small peeled jicama
- 1 orange (juice)
- 1 lime (juice)
- 1/4 cup honey
- 1/4 cup Cointreau (or any other orange liquor)
- 2 sliced oranges, peel
- 2 spoons fresh chopped mint
- 2 spoons filleted and roasted almonds

- Using a grater, mandolin. or the big knives of a manual grater, finely grate carrots as well as jicamas. In a salad bowl, mix the orange juice, lime juice, and the cointreau and half amount of mint. Cover and refrigerate this mixture for at least 1 hour.
- Put the carrots and jicamas in a cup along with orange slices, dust the cranberries and finally add the remaining chopped mint. Bathe using the dressing that you prepared previously and add the almonds, previously roasted (with a bit of salt and oil). Serve
