Cranberry Corn Muffins
Ingredients
- 1 1/2 cups Flour
- 1 1/4 cups corn flour
- 1/2 cup sugar
- 1 tsp of baking powder
- A pinch of salt
- 1 large egg
- 3.5 oz. dried cranberries
- 3/4 cup milk
- 1/3 cup vegetable oil
- 1 tsp of vanilla extract
Instructions
- Preheat oven to 350 F. Place paper muffin cups into muffin pan. In a large bowl mix flour, corn flour, sugar and baking powder.
- In another bowl mix egg, milk, and oil. Pour liquid ingredients over flour mixture, and then add cranberries and vanilla. Mix well and scoop the mixture into muffin cups.
- Bake for 15 minutes or unitl muffins are golden and toothpick test passed.
